What mail server address should I use?

There are several mail servers that are available for use besides mail.(domain.com) on our system. For instance, when using SSL you should be using secure.emailsrvr.com. The emailsrvr.com domain is part of our mail system. The DNS entry that makes it possible to use mail.(domain.com) is a CNAME to mail.emailsrvr.com and can be used interchangeably.
